Red Kuri is a squash when juvenile or pumpkin when mature. Full-flavoured and sweet, red kuri is often cooked with olive oil, butter and herbs. It has a nutty-tasting flesh and can be baked, steamed, chargrilled, sautéed or fried while adding a sweet flavour and texture to stir-fries. Its seed cavity is ideal for stuffing.
